Notes:

Type of milk is unspecified in recipe – semi-skimmed has been used. Also, the analysis includes raisins which are optional in the recipe.

Ingredients

½ 425g can DOLE® Peaches in juice , drained, reserving 60ml (4 tbsp) juice

75g (3oz) All-bran cereal

60ml (4tbsp) milk

100g (3½ oz) seedless raisins (optional)

1 egg, slightly beaten

60ml (4 tbsp) vegetable oil

40g (1½ oz) dark brown sugar

150g (5oz) plain flour

50g (2oz) sugar

2 tsp baking powder

pinch salt

Instructions

Heat oven 190C (375F) Gas 5.

Combine  reserved peach juice, bran cereal and milk in a large bowl and leave for a few minutes to soften cereal. Chop peaches and add to cereal mixture with the raisins, egg, oil and brown sugar.

Combine  flour, sugar, baking powder and salt and add to peach mixture. Stir ingredients together. 

Spoon  batter into 8 muffin cases and bake for 18 to 23 minutes until cooked.
