Ingredients

432g can DOLE®  Tropical Fruit Salad , drained and 60ml (4 tbsp) juice reserved

227g can DOLE Tropical Gold Pineapple chunks, drained

45ml (3 tbsp) orange marmalade

2 tsp Dijon mustard

½ tsp finely chopped fresh ginger

2 tsp cornflour

30ml (2 tbsp) vegetable oil

6 boneless, skinless chicken breasts

Instructions

Combine  tropical fruit salad, reserved juice, pineapple chunks, marmalade, mustard, ginger and cornflour.  Cook over medium heat until sauce boils and thickens, stirring constantly; set aside.

Cook chicken, in hot oil, over medium-high heat, in large frying pan.  Cook 10 to 15 minutes or until lightly browned on both sides and cooked through. Spoon sauce over chicken to serve.

Tip:  Tropical Fruit Sauce can also be served with baked ham or pork chops.
