Grilled Sea Bass with Pineapple Sauce

Ingredients

227g can DOLE®  Tropical Gold Pineapple chunks , drained, reserve juice

15ml (1tbsp) soy sauce

1tsp finely chopped garlic 

700g (1½ lb) sea bass or halibut steaks

150ml (5fl oz) tropical fruit juice 

2tsp cornflour

¼ tsp curry powder

½ tsp lemon zest

Instructions

Combine  reserved pineapple juice, soy sauce and garlic in shallow, non-metallic dish.  Add fish; turn to coat both sides.  Cover; marinate for 15 minutes in refrigerator.

Combine  tropical fruit juice, corn flour and curry powder in small saucepan.  Cook and stir over medium-high heat until sauce boils and thickens.  Stir in pineapple chunks and lemon zest.  Remove from heat; cover.

Grill  fish for 15 to 20 minutes or until fish flakes easily with fork, brushing occasionally with marinade and turning halfway through cooking.  Discard any remaining marinade.  Serve fish with warm Pineapple Sauce.
