Black Bean and Pineapple Quesadillas

Ingredients

450g (15oz) can black beans, rinsed, drained

227g can DOLE®  Tropical Gold Pineapple chunks , drained 

90ml (6 tbsp) prepared salsa

30-45ml (2-3 tbsp) fresh coriander, chopped

8 x 20cm (8inch) flour tortillas

110g (4oz) cheddar cheese, grated

Instructions

Combine  beans, pineapple chunks, salsa and coriander in medium bowl.

Spread   bean and pineapple mixture over 4 tortillas. Sprinkle with cheese then  top with another tortilla. Cook over medium-high heat, in nonstick frying pan for 1 to 2 minutes on each side or until cheese melts.

Cut  each quesadilla into 6 wedges.
