Ingredients

110g (4oz) boneless chicken breast

30ml (2tbsp) barbeque sauce

300g jar pizza sauce or tomato pasta sauce

30cm (12 inch) ready prepared pizza base

227g can DOLE Tropical Gold Pineapple chunks , drained

75g (3oz) chargrilled red pepper strips from jar, drained

60ml (4tbsp) barbecue sauce

175g (6oz) mozzarella cheese, grated

2tbsp fresh parsley, chopped

Instructions

Flatten  the chicken with a rolling pin and brush with 15 ml (I tbsp) of the barbecue sauce. Grill for 3 minutes, turn and brush with remaining 15ml (1 tbsp) barbecue sauce and grill for a further 3 minutes or until cooked then cut into strips.

Heat  oven 220C (425F) Gas 7.  Spoon pizza sauce over base and top with chicken, pineapple and red pepper. Drizzle 60ml (4tbsp) barbecue sauce over the pizza and sprinkle with cheese and parsley. Bake for 20 minutes or until the base is golden brown and the topping cooked.
