Ingredients
227g can DOLE Pineapple slices in juice
300g (12oz) long grain rice
7.5cm (3inch) piece cucumber
1 medium red onion
2tbsp fresh mint, chopped
Instructions
Drain pineapple, reserving juice, and chop into smaller pieces. Use the reserved pineapple juice with water to cook the rice. Cool for 10 minutes then stir in the pineapple, cucumber and mint.
