Ingredients

110g (4oz) uncooked pasta-fusilli or farfalle

450g (1lb) DOLE Tropical Fruit in Juice  (out of a 695g jar) reserving 30ml(2 tbsp) juice

120ml (4floz) fat free or reduced fat mayonnaise

1tsp brown sugar

½ tsp curry powder

1 small stick celery, chopped

2-3 spring onions, chopped

cooked chicken breast or turkey strips (optional)

Instructions

Cook pasta and leave to cool. Stir together the reserved tropical fruit juice, mayonnaise, sugar and curry powder in a large bowl. Add the pasta, tropical fruit, celery and onions to the curry dressing and toss gently. Serve on a bed of lettuce and top with chicken or turkey if desired.
