Ingredients
110g (4oz) fresh salad spinach leaves
450g (1lb) DOLE Tropical Fruit , drained (out of a 695g jar)
110g (4oz) seedless raisins
60g (2 ½ oz) roasted peanuts
2-3 spring onions, chopped
Dressing:
60ml (4tbsp) low fat yogurt- peach, lemon or lime
2tbsp soured cream
30ml (2tbsp) rice wine or white wine vinegar
Instructions
Put the spinach, fruit, raisins, peanuts and onions into a salad bowl. Blend together the yogurt, soured cream and vinegar and toss with the salad.
