Ingredients

½ a 695g jar DOLE Tropical Fruit , reserve 60ml (4 tbsp) juice 

30ml (2 tbsp) red wine vinegar

30 ml (2 tbsp) vegetable oil

15 ml (1tbsp) soy sauce

small clove garlic, crushed

½ tsp ground cumin

salt and black pepper

4 boneless, skinless chicken breasts

1 bag salad leaves

25g (1oz) macadamia nuts, chopped

Instructions

Whisk together reserved Tropical Fruit juice, vinegar, oil, soy sauce, garlic, cumin and salt and pepper. 

Pour 60ml (4tbsp) dressing over the chicken- reserving the remainder for the salad. Cover the chicken and refrigerate overnight.

Grill the chicken until cooked. Slice diagonally and serve on a bed of salad leaves with the tropical fruit.

Drizzle with remaining dressing, sprinkle with nuts and serve.
