Spinach Mandarin Salad

Ingredients

150g (5oz) fresh baby spinach leaves

420g (15oz) DOLE Mandarins in syrup , drained (out of 695g jar)

25g (1oz) sliced carrots

40g (1½oz) pecan halves, toasted

120ml (4floz) prepared honey dressing

40g (1½ oz) goat or feta cheese, crumbled

Instructions

Combine  spinach, mandarin oranges, carrots and pecans in large serving bowl.

Pour  dressing over salad; toss to evenly coat.  Top with goat cheese or feta.

Tip:   Slice carrot with vegetable peeler in short lengthwise strips, if desired or cut crosswise into thin slices.
