Romaine, Mandarin, and Avocado Salad

Ingredients

10ml (2 tsp) red wine vinegar

1tsp Dijon-style mustard

1 tsp honey

2½ tbsp extra virgin olive oil

salt and freshly ground black pepper

romaine lettuce, washed and torn into pieces

½  avocado, peeled and cut into bite-size chunks

300g (11oz) DOLE Mandarins in syrup , drained (out of 695g jar)

2 radishes, sliced

Instructions

Mix  vinegar, mustard, and honey in small bowl.  Whisk in olive oil and season with salt and pepper.
 
 Combine lettuce, avocado, mandarins and radishes in large bowl.  Add dressing and toss to coat.
 
 Tip:   Add cooked shredded chicken or turkey for and serve as a main for lunch.
