Grilled Peach Salad

Ingredients

45ml (3 tbsp) plus 5 ml (1 tsp) extra-virgin olive oil, divided

30ml (2 tbsp) rice wine vinegar or 22.5ml (1½tbsp) balsamic vinegar

2 tbsp finely chopped red onion

1 tbsp chopped fresh tarragon or basil, or 5 ml (1 tsp) dried tarragon or basil

425g DOLE sliced peaches in syrup , drained (out of 695g jar)

250g (9oz) fresh spinach

salt and black pepper

60g (2½ oz) feta or goat cheese, crumbled

Instructions

Whisk  45ml (3 tbsp) olive oil and vinegar in small bowl.  Add onion, tarragon, and season with salt, and pepper.

Brush  peach slices with remaining 5ml (1 tsp) olive oil.  Grill until lightly browned, about 4-5 minutes.  Cool for 1 minute, cut into bite size pieces.

Combine spinach, peaches, and cheese in large bowl.  Add vinaigrette; gently toss to coat.
