Ingredients

567g can DOLE ®  Tropical Gold Pineapple Chunks

175g (6oz) fresh baby spinach

1 large English cucumber, sliced

1 large Granny Smith apple, cut into thin wedges

200g (7oz) bean sprouts

Dressing:

150g (5oz) crunchy peanut butter

22.5ml (1 ½ tbsp) brown sugar

2tsp coriander powder

10ml (2tsp) soy sauce

Instructions

Drain  pineapple chunks; reserve 120ml (4 fl oz) juice.

Arrange  spinach, pineapple chunks, cucumber, apple wedges and bean sprouts in large salad bowl.

Mix  peanut butter, reserved pineapple juice, brown sugar, coriander and soy sauce until well blended. Pour over salad; toss to coat and serve.
