Pineapple Oatmeal Cookies

Ingredients

175g (6oz) oats

150g (5oz) self-raising flour

½ tsp cinnamon

pinch salt

50g (2oz) toasted, flaked almonds

75g (2oz) raisins

150g (5oz) brown sugar

1 small egg

227g can DOLE Tropical Gold Pineapple chunks , drained and chopped, reserve 75ml (2½ fl oz) juice

Instructions

Heat oven 180C (350F) Gas 4.

Combine  the oats, flour, cinnamon, salt, almonds and raisins. 

Beat  together brown sugar and butter until creamy then beat in the egg, pineapple and reserved pineapple juice. 

Stir  in the oat mixture and mix well. Spoon onto greased baking sheets and press down to flatted with spoon. Bake for 20-25 mins until golden. Cool on wire rack.
