Ingredients

695g jar DOLE® Peaches in syrup , drained, reserving 120ml (4floz) juice

1 egg

125g (4½ oz) dried batter mix from packet

Cinnamon sugar, honey or cream, to serve

Instructions

Slice  peaches in half lengthwise. 

Whisk the egg with the reserved peach juice and 150ml (5fl oz) water to make the batter mix.

Pour about 45ml (3 tbsp) mix in a greased frying pan and spread to about 10cm (4 inch) with the back of the spoon. Cook until brown then turn and cook the other side. Place 2-3 peach slices in the centre of the each pancake and roll up. Remove from pan and secure each roll with a cocktail stick. Keep warm. Sprinkle with sugar, or serve with honey or cream.
